Spicy Chicken Curry

If you already know how to cook, how about treating yourself and your loved ones with a new recipe?

Cooking can help you to soothe your nerves at this difficult time, appease your jangled nerves, cure boredom, help you sleep better and curb anxiety. Among many other benefits, cooking is therapeutic and a great de-stressor. Plus, cooking something like spicy chicken curry for your family is an added perk because there is instant gratification! And did we mention that it is easy to cook and great to taste? If you are planning to cook for the first time, this is a super-easy dish to cook to begin your culinary journey. So, pull out your apron and note down the recipe. 

Ingredients

  • Chicken breast – 500 grams, cut into small cubes
  • Mesmara sesame oil – ½ tsp
  • Mesmara groundnut oil – 1 tbsp
  • Mustard seeds – 1 tsp
  • Curry leaves – ½ tsp Dried and crumbled
  • Tandoori Masala – ½ tsp
  • Onion – 2 medium-sized, chopped
  • Garlic – 2 cloves, crushed
  • Ginger – ½ tsp, grated
  • Garam Masala – ½ tsp
  • Lemon juice – 1 tbsp
  • Cumin powder – 1 tsp
  • Chilli powder – 1 tsp
  • Water – as needed
  • Salt to taste

Method

Marinade the chicken with lemon juice and salt and keep it aside. It is recommended to keep the margination overnight, but if you want to cook it up in a jiffy, then an hour of margination will do too. In a deep bottomed pan, add the groundnut oil. Heat the oil and then add the curry leaves. Toss it for a minute. Next, add in the chopped onions and stir fry for a minute. Add the garlic and the ginger and fry further. Now add all the masala powders and cook well in low flame. Once the oil starts leaving the cooked masala, add the chicken marinade and stir well so that all the masala coats the chicken well. Add salt to taste. Now cover and cook for 40-45 minutes or until the chicken is cooked. Add a little bit of water intermittently or as necessary. Turn off the heat and drizzle the sesame oil at the end. Serve hot with freshly made fulka or paratha. 

Pro tip: Remember, sesame oil has a very strong flavor so do not add more. 

Optional: Garnish with roasted sesame seed on top.
