Women’s Day is just around the corner and we’re sure you already have made some plans to spend this special day in your way. Every year, on March 8, International Women’s Day is celebrated around the world in honour of the women. This year is no different. And this year, since it is on a Sunday, you have one extra reason to celebrate! (See, we don’t miss any opportunity to party around!) On that note, if you still have not made any plans, then how about partying with your girlfriends? Here we have curated three lip-smacking women’s day special recipes just to make your planning a bit easy. 

Spicy Prawn Peri-peri

A party has to start with an appetizer. And we can’t think of anything else than this spicy combo of prawn, garlic, and a drizzle of groundnut oil. Try it out, and you will thank us later.

Ingredients

  • Prawn – 300 grams, cleaned and deveined
  • Red chillies – 1, slit
  • Garlic – 1 clove, mildly crushed
  • Cinnamon powder – 1 pinch
  • Ground ginger – ½ tsp
  • Salt – 1 tsp
  • Mesmara cold-pressed groundnut oil – For frying

Method

Marinade the prawn with all the ingredients except the oil and let it sit for at least half an hour. Now take a pan, pour the oil, and heat it. Add the prawn along with the marinate. Cover and cook until the prawns turn light pink. Check with a spatula if the prawn is cooked well. Turn off the heat and serve hot over a bed of fresh green lettuce along with some crusty baguette. Remember, do not overcook the prawns as it may make the prawn hard and chewy. 

Baked Palak Methi Puri

If you or your friends are weight conscious and practice mindful eating, then you can indulge savouring this dish as much as you want without guilt taking over you. It is made with all healthy ingredients with loads of nutrients and antioxidants. Plus, since this is baked, your calorie intake remains at check.

Ingredients

  • Spinach – ½ cup, chopped
  • Fenugreek leaves – ½ cup, chopped
  • White millet flour – ¼ cup
  • Black millet flour – ¼ cup
  • Low-fat yogurt – 2 tablespoons
  • Mesmara cold-pressed groundnut oil – 1 tablespoon
  • Whole wheat flour – 1 tablespoon

Method

Combine all the ingredients in a bowl and knead well. Add lukewarm water and make a dough. Divide the dough into small balls. Roll it to make 8-inch diameter circles. Repeat the process until you are done with the entire dough. Prick the puris with a fork. This will ensure the puris get baked well. Preheat your oven at 180 degrees Celcius. Place the puris in a baking tray and bake for at least 30 minutes or until the puris turn light brown. Take them out and flip it. Bake the other side. When done, take it out, let it cool, and store it in an airtight container. You can do it a day or two before your guests arrive. Serve with chutney or dip of your choice. We would love it with imli chutney though.

Pear Blackberry and Coconut Cake

A party has to conclude on a ‘sweet’ note. If you’re tired of having the same sweets or ice creams, how about surprising your friends with your baking skills? Try this awesome combo of pear blackberry and coconut cake with a twist.

Ingredients

  • Mesmara groundnut oil – 100 grams
  • Brown sugar – 100 grams
  • Desiccated coconut – 50 grams
  • Vanilla extract – 1 tsp
  • Eggs – 2
  • All-purpose flour – 200 grams
  • Salt – a pinch
  • Blackberries – 150 grams
  • Ripe pears – 350 grams
  • Baking powder – 1 tbsp

Method

Beat the groundnut oil, coconut, sugar, vanilla extract well to make a smooth mixture. Add the eggs, and beat well. In a separate bowl, mix flour, baking powder, and salt. Now slowly fold in the weighted mixture in it. Add the peeled and chopped fruits in it. Bake for 40-50 minutes in a pre-heated oven. Serve it warm with a scoop of ice cream.
