Recipes for Monsoon Season

Light-on-Stomach Soup Recipe

Hot crunchy pakoras are hard to resist during monsoon. But too much of fried food can cause more harm than good. Instead, opt for a healthy and filling hot soup that will satiate your taste buds and keep your mid-day hunger pangs at bay. Here is a simple soup recipe.

Ingredients

  • Cauliflower – 1 cup (diced)
  • Carrot – 1 cup (diced)
  • Tomatoes – ½ cup (diced)
  • Cabbage – 1 cup (finely chopped)
  • Ginger – 1 inch long
  • Garlic – 3 or 4 cloves (minced)
  • Black pepper – ½ teaspoon
  • Lemon juice – 1 teaspoon
  • Salt to taste
  • Mesmara extra virgin olive oil – 1 teaspoon

Method

Take a pressure cooker and heat the oil. Temper it with ginger, garlic, and black pepper. When it starts crackling, add the vegetables and saute it for 2-3 minutes. Add salt and saute for a minute. Add 2 – 3 cups of water and close the lid. Let it pressure cook on medium flame and then slow cook it on a low flame for 10 – 15 minutes. When done, add lemon juice and serve hot with breadsticks or just like that.

Pro tip: Ginger and black pepper in addition to adding flavor are also good for treating mild cough and cold.

Monsoon Friendly Sprout Chaat Recipe

We all love to eat something “chatpata” during the monsoon days. A cup of hot tea with something spicy and tangy goes well as an evening snack. However, “chatpata” doesn’t mean you need to rely on street food that is unhealthy. Here is a quick recipe that has all the natural goodness to boost your immunity while curbing your hunger pangs.

Ingredients

  • Green moong sprout – 1 cup
  • Cucumber – 1 cup (finely chopped)
  • Tomato – 1 cup (finely chopped)
  • Rock Salt – to taste
  • Onion – 1 cup (finely chopped)
  • Lemon juice – 1 tablespoon
  • Green chilies – 1 tablespoon (finely chopped)

Method

Soak green moong overnight. Drain the water and keep it covered with a wet cloth for 1-2 days until the sprouts come out. Now take it in a bowl and add the cucumber, tomato, onion, and other ingredients. Give a quick toss. Drizzle lemon juice and serve. A powerhouse snack that satiates your cravings and healthy too.

Pro tip: Sprinkle some chaat masala for added flavor. You can store the sprouts in an airtight container for a day or two in the refrigerator.
