Must Try Holi Sweets for 2020

Holi, the festival of colour, is here! It is one of the biggest festivals of the Hindus and is celebrated across the country (especially in Northern India) with much fun and fervour. The vibrancy of colours brings people from all walks of life together. The Holi celebration starts with lighting up the bonfire the day before of Holi and this ritual is popularly known as Holi Ka Dahan. On Holi, adults and kids, old and young play with colours (gulal). The air fills with laughter and happiness all around. 

But this year, Holi is going to look a bit different. With the ongoing outbreak of the Coronavirus disease (COVID 19) people are taking precautionary measures and not indulging in mass gathering to prevent community transmission of the virus. However, that doesn’t mean you need to sit depressed at home. 

To cheer you up and help you get in the mood of Holi, we have got two Holi sweet recipes that you should try this year. 

1. Jalebi

Jalebi is loved by everyone, especially kids. You can make this delectable any time of the year and not just Holi. Remember, Jalebi takes time to make, so plan ahead of time. 

Ingredients

All-purpose flour – 3 cups

Corn flour – ½ cup

Hung curd – 2 cups

Ghee – ½ cup

Mesmara extra virgin olive oil – 2 cups

Baking soda – ½ pinch

Rosewater – 2 drops

Sugar – 3 cups

Saffron – 3 strands

Method

Take all the dry ingredients in a bowl and mix well. Add ghee and saffron. Now mix in hung curd and water to make the dough. Remember, jalebi batter has to be thick but with a pouring consistency. Leave it overnight to ferment. 

Make the sugar syrup by boiling water and sugar mixture. Keep boiling until the sugar dissolves and get a thick consistency. Add the rose water for flavour. 

Now take a deep bottomed pan and pour the groundnut oil. Heat it well. Pour the batter in a fine muslin cloth and make a small pore. Now pour the batter in the oil in concentric circles starting from the centre and gradually moving out. Fry the jalebis until it turns crisp and brown nicely. Soak the jalebis in warm sugar syrup and take it out. Serve with warm rabri or as is. 

2. Sakarpara

If it is all about Holi sweets, then it has to be Sakarpara. And the best thing about this tiny sweet bites is they can be stored for weeks and savoured anytime you want. 

Ingredients

All-purpose flour – 2 cups

Milk – ½ cup

Til – 2 tsp

Mesmara olive oil – to deep fry

Ghee – 4 tbsps

Sugar – ½ cup

Method

Melt ghee and keep aside. Melt sugar in warm milk and keep aside. Now in a bowl, take the flour, add the ghee and mix well. Next, add the sugar and milk mixture and mix well. Add the till and sugar and make the dough. Divide the dough into small portions, roll out and give shapes. Heat the oil in a pan and deep fry them until it becomes crisp. Take it out and drain the excess oil on a kitchen towel. Let it cool. Your crispy shakarpara is ready! Once it cools down completely, you can store it in an airtight container and consume it later.
