  • Eggs – 4
  • Spring onion (chopped) -1/2 cup
  • Carrots (finely chopped) – ½ cup
  • Mesmara extra virgin olive oil – 1 tablespoon
  • Salt and pepper – to taste

Method

Beat the eggs with all the ingredients, except olive oil. Take a muffin tray and brush with olive oil. Preheat your oven at 180 degrees for 5 minutes. Pour the beaten eggs in the muffin tray till half. Bake for 2 minutes to get delicious egg muffins. Healthy and tasty! Serve with toast.

  • Soaked sabudana (Sago) – 2 cups 
  • Curry leaves – a handful
  • Mustard seeds – 1 teaspoon
  • Peanuts (dry roasted and powdered) – 1 cup
  • Mesmara groundnut oil – 2 tablespoons

Method

Heat oil in a pan. Add curry leaves and mustard seeds and stir for a minute. Now add sabudana and cook for 2 – 3 minutes. Add the grounded peanuts and cook for another 2-3 minutes. Serve with a dash of lemon juice.

Recipe #3: Egg pancakes

Ingredients

  • Eggs – 3
  • Maida – 1 cup
  • Groundnut oil – 2 tablespoons
  • Onion (chopped) – 1 cup
  • Milk – ½ cup

Method

Beat the egg and milk together. Add the maida to it and whisk. Add chopped onions. Sprinkle salt and pepper to taste. Now heat the oil in a pan and put a portion of the mix with a spatula. Let one side cook well and then flip it. Cook the other side too and serve hot with ketchup.

  • Bread slice – 6

  • Butter – 3 cubes
