Ingredients:
- Eggplant – 1 medium size, sliced into thin circles
- Mesmara extra virgin olive oil – 1 tablespoon
- Garlic powder – 1 teaspoon
- Kosher salt – as per taste
- Parmesan cheese – 1 cup grated
- Seasoning – of your choice, Italian seasoning goes well
- Freshly grounded black pepper – 1 teaspoon
Method
Take a paper towel and arrange the eggplants on it. Slightly season with salt. Let it sit on the paper towel to remove all the moisture from the eggplant. Remember, this is an important step. The chips won’t be crisp if there is moisture in the eggplants. Once you are sure there is no moisture in the eggplants, shift it in a bowl and toss with the olive oil. Add the cheese, toss in the seasoning, and rest of the ingredients. Take a baking sheet and arrange all the eggplant slices in layers. Preheat your oven to 350 degrees. Bake the eggplant slices for 50 minutes or until the slices turn golden. Your crispy and delicious eggplant parm chips are ready to munch on!
